Marry Me Salmon Meatballs
Ingredients
- 2 Lbs Ground salmon, mine was from Sitka Salmon Shares
- 1 – 2 Tbsp Olive oil
- 2 Tsp Oregano, divided
- 2 Tsp Garlic powder, divided
- 2 Tsp Onion powder, divided
- 1 Tsp Thyme
- 1 Tsp Ground basil
- 1/2 – 1 Tsp Red pepper flakes
- 1/2 Tsp Salt
- 1/2 Tsp Ground black pepper
- 1/2 Cup Chicken stock
- 1 14.5 Oz Coconut milk
- 1/3 Cup Sun-dried tomatoes and liquid
- 5 Whole Garlic cloves, minced
- 1/2 Cup Shredded parmesan
- 1 Bag Fresh spinach
- 2 Ounces Fresh basil, torn
Instructions
- Begin by adding the frist 4 spices to the salmon and form the meatballs. Bake in a 350 degree oven for 12 – 15 minutes.Meanwhile, heat the oil in a skillet on medium high heat. Add the sun-dried tomatoes and remaining spices and cook for 2 – 3 minutes. Next, add in the chicken stock, mix well and simmer for 3 – 4 minutes. Now, add in the coconut milk, stir, and simmer for 2 – 3 minutes. Reduce heat to a modest simmer. Add in the spinach and basil and simmer until it wilts. Finish by adding in the salmon meatballs and simmer for 4 – 5 minutes.Serve by taking 2 – 3 meatballs and pouring in the sauce in a bowl. Enjoy!
