Ingredients

  • 2 Lbs Ground salmon mine was from Sitka Salmon Shares
  • 1 - 2 Tbsp Olive oil
  • 2 Tsp Oregano divided
  • 2 Tsp Garlic powder divided
  • 2 Tsp Onion powder divided
  • 1 Tsp Thyme
  • 1 Tsp Ground basil
  • 1/2 - 1 Tsp Red pepper flakes
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground black pepper
  • 1/2 Cup Chicken stock
  • 1 14.5 Oz Coconut milk
  • 1/3 Cup Sun-dried tomatoes and liquid
  • 5 Whole Garlic cloves minced
  • 1/2 Cup Shredded parmesan
  • 1 Bag Fresh spinach
  • 2 Ounces Fresh basil torn

Instructions

  1. Begin by adding the frist 4 spices to the salmon and form the meatballs. Bake in a 350 degree oven for 12 - 15 minutes.

    Meanwhile, heat the oil in a skillet on medium high heat. Add the sun-dried tomatoes and remaining spices and cook for 2 - 3 minutes. Next, add in the chicken stock, mix well and simmer for 3 - 4 minutes. Now, add in the coconut milk, stir, and simmer for 2 - 3 minutes.

    Reduce heat to a modest simmer. Add in the spinach and basil and simmer until it wilts. Finish by adding in the salmon meatballs and simmer for 4 - 5 minutes.

    Serve by taking 2 - 3 meatballs and pouring in the sauce in a bowl. Enjoy!
