The inspiration for this Gluten Free Parmesan Crusted Tilapia is to try and recreate the gluten dishes that I so enjoy and master them using gluten free products.  Here is a link to a gluten version of Parmesan Crusted Tilapia.  My son who was home for one month before he moved to Seattle for his new first job requested this dish.  I actually am writing this post on our way home from helping with his relocation.  His relocation is hard on my wife and I but I am so excited for his next journey and growth into manhood.  Getting back to the food, I love when my kids are home because they make the requests for dinner and I am all too happy to oblige.

Gluten Free Parmesan Crusted Tilapia

So I actually made a gluten free and gluten crusted tilapia recipe side by side to see the visual difference.  I did not ask, or should I say subject, my son to have to eat the gluten free version.  I could see a difference between the appearance of the two.  The biggest difference is the thickness of the crust.  The gluten free breadcrumbs do not have as much volume as there gluten counterparts.  I know that from other recipes I have made including GLUTEN FREE BREAD.  Another big difference was the coloring and coverage of the breading.  The gluten free version does not brown as much as the gluten breadcrumbs. Without the same volume, it makes sense to that it does not cover the surface as well either.

Notwithstanding these differences, the taste is very similar.  The parmesan really is the dominant flavor and it works well in both versions.  I am not missing my gluten and the farther my memory gets away from the gluten versions of what I make, the easier it will be.  You will be seeing a number of gluten free recipes coming up including an amazing artisan bread.

Gluten Free Parmesan Crusted Tilapia

Ingredients 

  • 4 Fillets Tilapia
  • 3/4 Cup Gluten Free Breadcrumbs
  • 1/2 Cup Grated Parmesan
  • 1/4 Cup Lemon Juice
  • 2 Tbsp Oregano
  • 1 Tbsp Salt
  • 1 Tbsp Black Pepper
  • 1 Tbsp Old Bay Seasoning

Instructions 

  • Put the lemon juice in one bowl and the breadcrumbs, parmesan and oregano in another bowl.
    Season the tilapia with the salt, pepper and Old Bay.  Dredge the tilapia through the lemon juice, and then, the breadcrumbs.
    Spray both sides of the crusted tilapia fillets liberally with olive oil spray.
    Bake in a 325 degree oven for 12 minutes.  Let rest 1 – 2 minutes.
    Serve and enjoy!
