Black Bean and Corn Salad

Do you struggle to come up with different types of salads?  In the summer, there are so many options for two reasons.  First, there is greater availability of fresh vegetables to work with.  Second, I think the season as well as what we think about for salads gives us more flexibility.  Case in point, this Black Bean and Corn Salad.

My wife and I love corn in our salads.  In the summer, you can always throw the corn on your grill to add a great char to the corn.  If you are short on time, you can always throw it in the microwave.  Now, it is very common to mix black beans and corn.  I don’t know why, but for years I was not a fan of black beans.  What was I thinking?  What food do you eat today that you used to think you did not like?  I know we all have a number of answers to that question.  To get you thinking about that question, I will answer it myself.  The one food item I remember the most really not liking as a kid was Brussel sprouts.  I have now tried them a couple of times and when you bake them and put a nice broil on at the end, the Brussel sprouts get so flavorful and crisp.

So back to the Black Bean and Corn Salad.  With this base, you can add almost anything you like in your salads.  For me, I really like peppers and they add such good color to your dish.  I finished with some onions, fresh cilantro from my backyard and used fresh limes for my dressing.  So flavorful.  So healthy.  So colorful.

Black Bean & Corn Salad

A super fresh salad with black beans, corn, peppers and topped with fresh lime.
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 6

Ingredients

  • 2 15- ounce cans black beans rinsed and drained
  • 3 ears fresh cooked corn grilled, kernels cut off the cob
  • 2 red bell peppers diced
  • 2 cloves garlic minced
  • 2 tablespoons minced shallots
  • 2 teaspoons salt
  • 1/4 teaspoon cayenne pepper
  • 9 tablespoons extra virgin olive oil
  • 6 tablespoons fresh lime juice
  • 1/2 cup chopped fresh cilantro plus more for garnish

Instructions

  1. Combine all ingredients in a large bowl and mix well. Cover and chill for a few hours. Add the cilantro right before serving and mix gently. Garnish with a more chopped cilantro. Serve at room temperature.

    Absolutely yummy! I love salads like this. The beans make them filling and I love the lime juice and cilantro in it.
