In my house, we love breakfast for dinner. Â This was breakfast for lunch. Â So is it breakfast, or brunch then? Â My youngest son asked shortly before lunch if he could have a friend over for lunch. Â This must be a rhetorical question. Â A chance to cook for more people. Â Always. Â And my son’s friend Daniel (shout out Daniel) has actually been a supporter of the blog and gives me some shouts out on FB. Â Keep them coming. Â Consider this meal a bribe. Â Sorry guys, I am not above reproach when it comes to blog support.
Back to the meal. Â I had maybe 30 minutes to pull this together. Â I quickly looked in the freezer and saw that I had smoked sausage. Â Throw it in a bowl of warm water and it should defrost in 15 minutes or so. Â Brown the sausage. Â Use the same pan to cook the eggs. Â Add some cheese and you have great flavor.
Ingredients:
- 1 smoked sausage, sliced
- 10 eggs (8 whole and 2 egg whites), beaten
- 1/3 – 1/2 cup of  shredded cheddar cheese
- 1 tsp canola oil
Directions:
After thawing the sausage, heat a skillet on medium high heat with the oil. Â When hot, add the sausage. Â Cook until the sausage is browned on both sides – 10 minutes. Â Remove from pan and drain. The pan will have a lot of oil from the sausage as well. Â Pour out all but 1 tbsp. Â Add the beaten eggs and stir when the bottom begins to congeal. Â Keep cooking until the eggs have hardened. Â Add the sausage back in. Â Finish by adding the cheese and cooking until it melts. Â Enjoy!
