How this started

It started with a camera I didn’t know how to use and a habit of cooking too much food. Friends kept asking for recipes, so I started writing them down. The first hundred posts were rough — bad light, no measurements, way too many ingredients. I kept going anyway.

Somewhere along the way it turned into a real thing. My roux and cheese sauce post has been passed around for a decade. Readers email me about my gluten-free bread almost every week, and I answer all of them, because that’s the whole point of doing this.

I’m still not a chef. I’m a home cook who tests things until they work and tells you the truth about how they turned out.

Why gluten-free

My wife and I went gluten-free years ago. I refused to accept worse food as the price of it, so I spent years learning which flours, gums and hydration levels actually work. Honey and apple cider vinegar changed everything.

A serious seafood habit

Crispy-skin salmon, steamed halibut, blackened redfish, and the occasional very good tuna melt. Seafood rewards confidence and high heat, which happens to be how I like to cook.

The pizza oven obsession

Two years of gluten-free dough tests in a backyard oven at 900°F. My family has eaten a lot of failures. The Pizza page is what survived.

Learning to shoot food

Every photo here is daylight on my kitchen counter, usually while dinner goes cold. I’ve written up the gear and the lessons on the Blogging Resources page.
