In my house, the kids ask for me to make my cole slaw. That is pretty good when it comes to eating vegetables. This is a recipe that I have perfected by adapting a few different recipes the base of which is in Smoke and Spice.
Recipe
Cole Slaw:
- Cut one head of cabbage in your favorite style. I add either red cabbage or carrots for color.
Dressing:
- 1 cup of Mayo
- 1/3 cup of evaporated milk (I have also used 1/2 & 1/2)
- 3 Tbsp sugar
- 3 Tbsp Carolina Red (basically a mixture of red wine vinegar and ketchup)
- 3 Tbsp apple cider vinegar
- 2 Tbsp sweet & spicy mustard
- 2 Tsp minced garlic
- 2 tsp celery salt
- 1 to 2 tsp cayenne
- 1 tsp pepper
- salt to taste
