What should you love about this GF Cajun Chicken Pasta? There are great spices, and then, the creaminess from the milk and Pepperjack cheese.

Guess what? This is a one pot meal. The gluten free noodles are added in dry. The creaminess begins to form as soon as the milk is added. The starch released from the pasta helps the milk thicken. Then, the cheese is added and the sauce thickens some more.

One pot meals are successful when they are layered with flavor. The recipe begins with browning the chicken. Next the vegetables are softened. The chicken and spices are added back in followed by the dry pasta. The recipe comes together with the addition of the milk and the cheese. Just let the starch do its work.

GF Cajun Chicken Pasta

My GF Cajun Chicken Pasta is a one pot meal made in a Dutch oven that has spice, texture, color, creaminess and a whole lot of flavor.

Ingredients

  • 10 Whole Chicken thighs cut in 1 " strips
  • 1 Whole Medium yellow onion sliced
  • 1/4 Whole Green, Red, Yellow & Orange Bell Pepper sliced
  • 8 Ounces Pepperjack cheese
  • 32 Ounces Gluten free pasta
  • 2 Cups Milk
  • 1 Tbsp Smoked Paprika
  • 2 Tsp Chili powder
  • 2 Tsp Spanish Paprika
  • 2 Tsp Smoked Cumin powder
  • 4 Tsp Olive oil divided

Instructions

  1. Begin by heating 1/2 the olive oil on medium high heat in a Dutch Oven. Add the chicken and brown in batches. Remove from the pan and set aside.

    Add the remaining olive oil and once hot, add the onions and peppers. Cook for 4 – 5 minutes until softened. Next, add back the chicken and the spices and cook for 1 – 2 minutes making sure all the ingredients are combined.

    Add in the dry noodles followed by the milk. Mix well and put the lid on. Simmer for 15 minutes. Remove the lid and add in the cheese. Mix well and put the lid on if the pasta is not cooked through. If the pasta is cooked through, simmer without the lid to allow the sauce to thicken.

    Serve and enjoy!
