Blueberry Pancakes

My daughter was getting ready to drive back to school after coming in for the University of Michigan football game at Northwestern. I asked her if I could make something for her before she drove back?  How about some pancakes Dad.  It is great to see they never grow up.  Of course, this means she wanted chocolate chips added to her pancakes.  If I was making them for her, then of course I would make some for me too.  For me, it was blueberry pancakes.  Why do we use a pre-made pancake mix, ever?  It is so easy and takes maybe 2 minutes to create your own batter.  The end result is pancakes that are so fluffy with great flavor.

Ingredients (adapted from Allrecipes):

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp Salt
  • 1 tbsp Sugar
  • 1 1/4 cups of skim milk
  • 1 egg
  • 3 tbsp melted butter

Directions

In a large bowl, mix together the flour, baking powder, salt and sugar.

Make a well/hole in the center and pour in the milk and egg.

Start pulling in a little bit of the flour so when the melted butter is added it does not hit the egg mixture directly.   Now, add the melted butter and mix until smooth.

Heat a griddle to 300 – 325 degrees.  I have griddle with a thermometer.  Take a 1/4 cup measure and scoop the batter on to the griddle.  Next, add your blueberries to the batter while on the griddle (If you are all having the same addition to your pancakes, add the blueberries/chips or whatever you use to the batter before putting them on the griddle).

The pancakes will need 2 – 3 minutes per side.  The pancake is ready to flip when the top side has bubbles forming.
