This post is being updated for the Shine Supper Club monthly offering.  This month they requested that our posts be a childhood favorite.  What is more basic, memorable than grilled cheese.  I make these sandwiches for my kids still today and my baby is 18 years old.

The key to a great grilled cheese is the bread.  The bread browned perfectly.

Oh yea, the cooking, even something simple, is all about the technique.  I have found the best temperature to grill at is 300 degrees.  It also helps to use softened butter but not to soft.  The butter should still be somewhat firm.  However, if you use a good melting cheese, then you might need to cook at a higher temperature to brown the bread before all the cheese melts from the sandwich.  I turned the heat up to 350 degrees when I flipped the sandwich in this case.

Recipe
White Bread Grilled Cheese:

  1. Butter one side of each piece of bread
  2. Fill the sandwich with 3 slices of colby jack and 3 slices of jalapeno jack
  3. Grill each side of the sandwich for 3 minutes; cut and enjoy.
