Turkey Slaw Sriracha Sandwich

I have such fun making sandwiches.  I have said before that I really think your chef creativity is pushed when making sandwiches.  A sandwich is thought of as so basic, just some meat between two pieces of bread.  One of my favorite shows on the Cooking Channel is Eat Street.  The food trucks do some really cool stuff.  I am pretty sure I have not seen this turkey slaw Sriracha sandwich combination but I feel I have been inspired by some of the creations I have seen made there.

Ingredients:

  • 2 pieces of Wheat ciabatta
  • 1 tsp of Sriracha sauce
  • 2 slices Chihuahua (Mexican quesadilla cheese)
  • 1/4 cup shredded mozzarella
  • 3 – 4 slices smoked turkey
  • 1/4 head of cabbage
  • 2 tbsp mayonnaise
  • 3 tbsp olive oil
  • 1 tsp white wine vinegar
  • 1 tsp lemon juice
  • 1 tsp oregano flakes
  • salt & pepper to taste

Directions:

Start by shredding your cabbage.  In a separate bowl mix the mayonnaise, olive oil, vinegar, lemon juice, oregano, salt and pepper.  Pour the dressing on the cabbage and mix well.  Set aside.  Slice the ciabatta and dot each side with the Sriracha.

Next, put the cheese on each side of the bread.

Place on a baking tray and melt the cheese in a 325 degree oven. Should take 2 – 3 minutes to get a good melt.  Add the turkey on top of one side of the melted cheese.  Finish the sandwich by putting on as much slaw as you like.  Top with the other bread.

      You are funny. I love ciabatta and typically like to use it for a Panini.
