Sriracha Chicken Salad

My wife is really beginning to appreciate my creativity.  Not how you would think.  It is in my use of leftovers. Depending on how you look at this can be a positive trait or a negative trait.  For better or worse, I picked this trait up from my father.  You could also say that I make my own version of Food Network’s Chopped.   I like to go into my fridge and see what I have from last night’s dinner.

Now, I won’t say that this is so creative.  It was just good.  I made this on a weekend, and when my wife got home from coaching mid-afternoon, she asked what we had in the fridge.  I pulled out this Sriracha Chicken Salad and she just loved it.

Ingredients:

  • 2 chicken thighs (mine was Fried Chicken from the night before)
  • 1/4 cup of mayonnaise
  • 2 tbsp Sriracha sauce
  • 1 1/2 – 2 stalks celery, diced

Ingred 500

Directions:

Remove the skin from the chicken and dice.  In a separate bowl, mix the mayonnaise and Sriracha together until combined.

Add the chicken to the sauce.  Now, dice the celery and add to the chicken and Sriracha sauce.

All in bowl 500

Mix well. Serve on a piece of red cabbage.

    This sounds so simple and delicious! I always have Sriracha in the house, and often am trying to come up with new ways to use chicken. Thanks for the idea!

      My son got us to keep the Sriracha in the house. Now, I don’t know why I didn’t find it sooner. It is not as spicy as people say. Adds flavor with just enough spice.

    Yum! This looks fantastic-I’ve used buffalo sauce but sriracha would be awesome!
