I really like making pizzas at home.  The inspiration for this dish was my proving to my wife that I could create a pizza that she would say it was worth having it created at home.  The key to “WINNING” over my wife was to make a thin crust.  How hard could that be?  This pizza was also a weeknight meal so it needed to come together quickly.  Neither one of us wanted to eat dinner at 9pm.  As a quick aside, I have made a couple of pizzas before including a Breakfast Pizza and a Creole Pizza.

Semi Homemade Veggie Pizza

There were a couple of techniques I learned from making this recipe.  The first learning, which was all about my credibility was to get a thin crust.  Pretty simple to do – make sure your dough is reasonably warm.  Take it out of the fridge early enough so that it is pliable.  Then, as you roll it out, if you think it is thin, make it thinner.  The dough will rise while resting and will rise while in the oven.  Be sure to use plenty of flour while rolling out the dough and make sure your counter surface has flour on it.  If you use enough flour, you will have not problem picking up the dough to put on your pizza stone or pizza grill.

One final learning is do not overdo your sauce.  A little sauce goes a long way.  More importantly, if you are going for a thin crust, less sauce will help to keep the dough crisp while baking.  The pizza should be cooked on as high a temperature as you can in your oven.  I am trying to remember but I believe I cooked this in a 500 degree oven.  The high temperature makes the crust crispy and gets a good char on the mushrooms, peppers and onions.
