My wife calls me a garbage can because I will eat any and all leftovers. When it comes to cooking, I call my resourceful.
To make this Salsa Topped Tilapia, I took advantage of a pot luck gathering we had at my house. One of our participants is the head chef at a kosher caterer called DANZIGER. He is an awesome cook. He provided one bucket full each of cilantro, onions and tomatoes. Now I normally would not want to go to waste but my wife said you are not going to throw that out. Gauntlet thrown.

Salsa Topped Tilapia
I love doing things for my wife. Right now, I am watching Daddy’s Home 2 for the second time. I watched it on the plane last week and I new my wife would love it. So I am watching it again. It is stupid but it is so much fun. I wish I could share the video I took of her doubling over laughing.
This dish is so easy to prepare. First, I put the onions and cilantro into a skillet with a little bit of olive oil to soften them up and cook the bitterness out of the onions. Next, I put the cilantro and onions into a pot with the tomatoes. I cooked them down for a good half hour or so. That is it. Another example of a Mexican spiced dish is this SPICY SEA BASS or this SPICED SALMON.
To prepare the final salsa topped tilapia, I covered the tilapia with as much salsa as would fit on the piece of fish. It all went into the oven and was warmed together. Once the fish was cooked through, some six to eight minutes, it was pulled out of the oven and ready to eat.

Salsa Topped Tilapia
Ingredients
- 3 Fillets 6 Ounce Tilapia fillets
- 1 quart Tomatoes diced
- 3 Whole White Onions diced
- 2 Bunches Fresh Cilantro
- 1 1/2 Tbsp Adodo Seasoning
- 1 Tbsp Olive Oil
Instructions

Begin heating the oil in a pot. Add the onions and cilantro. Cook down for 5 minutes or so. Add in all the tomatoes and cook down on medium heat for 25 - 30 minutes.
Place the tilapia on a baking tray. Top with the adobo seasoning. Then, top with as much salsa as you can fit on the fillet. Bake in a 325 degree oven for 6 - 8 minutes.
Serve and enjoy!
