As you know, I love sandwiches and creating fun sandwiches with leftovers. This Salmon Pesto Sandwich took advantage of both grill salmon from the night before and the Compound Pesto Butter I made as well. The only bummer, there was no one at home to share them with me. I made this one all for myself :).
Consider this an occupational hazard of a food blogger with kids away at college. Sometimes, I just have to appreciate the work myself. I think my arm is breaking with me patting myself on the back so hard. Ow. Well, if you are cooking for yourself, then make something you like. I love salmon.
We have it every week and I always buy extra so I can make a sandwich or throw it in a wrap. Below are a couple of the salmon sandwiches I have made in the past.
- 1 - 3 oz piece of grilled salmon
- 2 pieces Italian bread
- 2 tablespoons pesto butter
- 2 slices yellow tomato
- Red and green cabbage
- Add the pesto butter to the bread and grill in a pan on medium high heat for 2 minutes until golden brown.
- Now layer the sandwich, starting with the salmon, then the tomatoes and finish with the slaw.
- Serve and enjoy!

THIS is a REAL sandwich. I love salmon. It’s nice and thick. I prefer toast for the bread.
This works for me.
