You read in an earlier post about the chicken I smoked. Â One of the best things about smoking is you can throw extra on the grill and use it during the week on top of a salad or as done here, you can make it into a pulled chicken sandwich. Â This is probably my wife’s favorite way to eat the smoked chicken.
I actually separate the chicken into pieces using my hands.  Hence, it is called pulled chicken.  I think it makes for a better texture of the meat in the sauce and on the sandwich.  I posted earlier this past week about the sauce.  This dish gets its distinct and deep flavor from the chicken simmering in this sauce.
Ingredients:
- 3 pieces each of smoked chicken breasts and thighs
- Hamburger buns
Directions:
Take the smoked chicken and pull it while the sauce simmers. Â Add the pulled chicken to the sauce and simmer for as long as you like. Â This was simmered for a good couple of hours and reheated the next day when served. Â After fully reheated, take as much of the chicken, sauce and top on the bun. Â Enjoy!
