Portabello Parmigiana

When you would like something hearty but not made with meat, find yourself some portabellas.  I made a traditional parmigiana recipe with portabellas as the base.  I also did this on a weeknight after work.  I used store bought Italian style tomato sauce.  Hearty & tasty!

Recipe
Portabella Parmigiana:

  1. Pre-heat oven to 350 degrees.  Meanwhile wash 4 portabellas very good and move to a tray
  2. Brush the mushrooms on the top side lightly with olive oil and bake for 10 – 12 minutes
  3. While the portabellas are baking, open the sauce and pour into a sauce pan and heat
  4. Remove the portabellas from the oven and spoon 3 or 4 spoonfuls of the tomato sauce into the caps that are now turned over
  5. Cover each portabella with 5 – 6 slices of mozzarella and return to the over for 2 – 3 minutes

    Definitely going for these Peter. Don’t you just love portabella mushrooms and smothered in sauce and cheese. Yum.
