Pasta Roma

I feel like I have a great network of food friends now.  This blogging experience has introduced me to people from all over the world.  More importantly, it seems almost everyone is so gracious and so willing to share their ideas and recipes.  On a number of recent Fridays I have had some product in the fridge and I have reached out to my FB friends to get ideas.

This past Friday, I wanted to use my new pasta machine.  It did not work but that is for another post.  I posted on my FB asking for ideas.  The recipe that struck me was from the ladies over at Oh So Delicioso.  It is called Italian Delight.  It is a very light pasta sauce.

Pasta Roma (adapted from Oh So Delicioso):
Ingredients
8 Roma Tomatoes
1 yellow onion
1 bag of baby spinach
1 tbsp canola oil
4 tbsp Butter
2 tsp chopped fresh Basil
3 cloves of garlic, diced
6 mushrooms, sliced (earthier the better)
1/4 cup white wine
Salt and Pepper
1/4 cup Whipping Cream
1 handful of Parmesan cheese
Instructions
To make, place tomatoes in boiling pot of water for about 2 mins (give or take).  The skins of the tomatoes will begin to peel.  Remove tomatoes from pot and set aside in a bowl and let cool.

Once cool, peel off skins.  When all skins are peeled, cut in half and squeeze out seeds. Dice tomatoes leaving behind the top hard core.
Heat the oil in large skillet on medium high heat. Add the onion and cook for about 5 minutes until soft.  Next, add in the garlic and cook for 1 minute to let it flavor out.  Finish by adding the spinach and cook until it has wilted.

Remove from pan and pour of excess oil.

Put the sliced mushrooms in the pan and add the chopped basil.  After a couple of minutes, add the wine and continue to cook until it has evaporated.

Now it is time to add tomatoes, salt and pepper.  Simmer on low heat for 5-8 minutes.

Add back the garlic and onions and simmer for 1 minute.  Finish by adding the whipping cream and simmer for another 15 mins.

This is a good time to cook pasta. When finished toss spaghetti with sauce and top with the Parmesan cheese.  Enjoy!
