Marinated Wedge Fries

In an earlier post, I explained I was teaching my son and girlfriend some basic cooking techniques that they could use.  In this easy side, they were learning knife skills, making a marinade/dressing and baking for a healthier alternative.

We started with showing how to quarter the potatoes after showing the correct way to hold and control the knife – putting your thumb and index finger on each side of the blade for control.  Then, cutting using a rocking motion.  After the wedges were cut, we made our marinade.  Simply combining olive oil, mustard and some basic spices.  There you have it.

Recipe
Marinated Wedge Fries:
Ingredients:

  • 6 new potatoes
  • 1/4 olive oil
  • 3 tbsp brown mustard
  • 1 tsp each thyme, sage, salt & pepper
Directions:
After quartering potatoes, set aside on a baking tray.  In a medium bowl combine the marinade ingredients and stir well.  Pour the marinade over the fries and use your hands and make sure they are covered fully.  Sprinkle a little more salt and pepper and place in a 325 degree oven for 20 minutes.  Flip fries half way through the cooking time.  Make sure to judge the doneness by having a slight crispness/char on the outside. Enjoy!
