This looked like a fun idea. Â I love chocolate and I love cherries. Â When I looked for a recipe, it called for frosting to be used as a binder. Â Guess what? Â I did not have any frosting. Â So I googled, how do I make cake balls without frosting. Â And wouldn’t you know it, there was an answer. Â I used the recipe from Finding Silver Linings to make My Maraschino Cherry Cake Balls
Ingredients (adapted from Finding Silver Linings):
- 1 Boxed chocolate fudge cake mix
- 1/2 cup milk
- 2 tsp vanilla extract
- 1 Jar of Maraschino Cherries with juice
- 8 oz of milk chocolate
- 1/2 cup of heavy cream
- 1 tsp of coffee granules
Directions:
Make cake mix according to directions in a 9″x 13″ pan and cool completely.  Crumble cake into a large bowl.
Whisk together milk, couple of tbsp of the cherry juice and the vanilla. Â Then, add it slowly to the cake crumbs until you can mush together the cake and liquid without falling apart. Â I added extra milk a little at a time until I could form the cake. Â Begin to roll into a ball by beginning with the bottom half of the ball. Â Grab a cherry and push into the cake ball.
Finish by grabbing more of the cake and forming into a ball. Â Using the liquid in lieu of the frosting makes it a little harder to make these balls small. Â Put into the fridge for a couple of hours to firm up.
 Meanwhile, melt the chocolate with the milk and the coffee granules in a bowl placed on top of a pot with very hot water.  Keep mixing until fully combined.  Pour the mixture on to the balls.
Refrigerate for at least an hour allowing the chocolate to set.
Serve and enjoy!

These would be wonderful at a party, Peter … or even as quick gift. I made something slightly similar at Christmas which were mini Christmas puddings … they were a lot of fun, if very messy to make!
