Maque Choux Smoked Peppers

This is a tasty dish that looks so good when served in the peppers.  It is easy and not one that you see often so it always impresses guests.

Recipe
Maque Choux Smoked Peppers:

  1. Take 4 red peppers and cut off the top just below the stem, core and remove seeds; reserve the peppers and make the filling
  2. Now melt 3 tbsp butter and 2 tbsp vegetable oil in a skillet
  3. Add corn cut from the cob of corn that was frilled, 1 chopped medium onion, and 1/2 a diced green pepper with 1/2 tsp white pepper and 1/4 tsp of salt – cover pan and cook for 10 minutes
  4. Remove the lid and add 1 cup of chicken stock, 1/4 cup of fat free 1/2 & 1/2 and 6 -8 dashes of Tabasco and continue cooking until 1/2 the liquid has reduced
  5. Remove the filling from the heat and add 2 cups of breadcrumbs and one egg white beaten
  6. In a greased smoke proof pan, add the red peppers now stuffed with the corn mixture and with the top on and cook in your smoker for 65 – 75 minutes on 225 degrees, remove and serve in the peppers
