This is a tasty dish that looks so good when served in the peppers. Â It is easy and not one that you see often so it always impresses guests.
Recipe
Maque Choux Smoked Peppers:
- Take 4 red peppers and cut off the top just below the stem, core and remove seeds; reserve the peppers and make the filling
- Now melt 3 tbsp butter and 2 tbsp vegetable oil in a skillet
- Add corn cut from the cob of corn that was frilled, 1 chopped medium onion, and 1/2 a diced green pepper with 1/2 tsp white pepper and 1/4 tsp of salt – cover pan and cook for 10 minutes
- Remove the lid and add 1 cup of chicken stock, 1/4 cup of fat free 1/2 & 1/2 and 6 -8 dashes of Tabasco and continue cooking until 1/2 the liquid has reduced
- Remove the filling from the heat and add 2 cups of breadcrumbs and one egg white beaten
- In a greased smoke proof pan, add the red peppers now stuffed with the corn mixture and with the top on and cook in your smoker for 65 – 75 minutes on 225 degrees, remove and serve in the peppersÂ
