When I got the chance to participate in the pairing of Hellmann’s Mayonnaise and Lipton Iced Tea, I started thinking like I was on the Food Network show Chopped. Now traditionally, we would think of Lipton Iced Tea for a summer drink, sitting outside in the sun. I wanted to not only celebrate summer with a cold, refreshing iced tea but infuse it in a recipe. So this shopportunity was the perfect vehicle to pair Hellmann’s mayonnaise and the Lipton Iced Tea in a recipe. I decided that the best way to pair these was to infuse the Lipton Iced Tea in a sandwich. I also wanted to use honey in both the sandwich and the drink since it is such a natural compliment to iced tea. I have learned through my cooking and watching many Food programs, how they have an ingredient run through the meal providing some continuity to the meal. it works. And this recipe, while looking traditional really took this concept to its fullest. The chicken was baked and then marinated overnight in a pot of the Lipton Iced Tea. This created depth of flavor and super moistness in the chicken. I then used the Hellmann’s mayonnaise as the base of my chicken salad but used some reserved Lipton Iced Tea marinade and some honey. The honey is a great accent to both the mayonnaise and the iced tea – let’s just say they make a #TEArifficpairs thanks to #collectivebias.
My daughter helped me with my shopping so we headed over to our local Walmart to buy our Hellmann’s and Lipton Iced Tea.
- 4 Chicken Thighs, pulled
- 1 stalk celery, diced
- 1 yellow & orange sweet pepper, sliced
- 1/4 cup Hellmann's Mayonnaise
- 1 tbsp honey
- 1 quart water
- 1 Lipton Iced Tea Bag
- 3 - 4 tbsp poultry seasoning
- salt & pepper to taste
- 1 cup water
- Spice the chicken with the poultry seasoning, salt & pepper. Place in a 325 degree oven and cook for 20 minutes.
- Let the chicken the thighs cool. While cooling, take the Lipton Iced Tea bag and place it in a pot with 1 quart of water.
- Add the chicken thighs to the steeped Iced Tea and put in the the fridge overnight. The next day, when you are ready to assemble the chicken salad, pull the chicken with your hands in to small pieces and set aside. In a small bowl, combine the Hellmann's Mayonnaise, honey and 2 -3 tsp of the Lipton Iced Tea marinade.
- Mix well. Drop in the pulled chicken. Next add the celery and the sweet peppers. Salt and pepper to taste. To assemble the sandwich, take a good hearty roll and start with a big piece of romaine lettuce. The sturdy lettuce will make the sandwich hold up better. Top with as much of the chicken salad as you can. Time to dig in.
