Spice the chicken with the poultry seasoning, salt & pepper. Place in a 325 degree oven and cook for 20 minutes.

Let the chicken the thighs cool. While cooling, take the Lipton Iced Tea bag and place it in a pot with 1 quart of water.

Add the chicken thighs to the steeped Iced Tea and put in the the fridge overnight. The next day, when you are ready to assemble the chicken salad, pull the chicken with your hands in to small pieces and set aside. In a small bowl, combine the Hellmann's Mayonnaise, honey and 2 -3 tsp of the Lipton Iced Tea marinade.

Mix well. Drop in the pulled chicken. Next add the celery and the sweet peppers. Salt and pepper to taste. To assemble the sandwich, take a good hearty roll and start with a big piece of romaine lettuce. The sturdy lettuce will make the sandwich hold up better. Top with as much of the chicken salad as you can. Time to dig in.
