Quick, bold, and made without cream! This is a Light Gluten Free Cajun Pasta. My Cajun-inspired pasta comes together fast thanks to gluten-free dry pasta and a simple, flavor-packed approach.

Ingredients

I used smoked beef sausage and seasoned chicken breast for protein, then tossed everything with sautéed peppers, onions, and Zatarain’s Creole spice blend. Instead of heavy cream, I created a lighter sauce using a bit of the starchy pasta water and a little mozzarella and parmesan cheeses.

Make it your own

What I love most about this dish is how customizable it is. You can crank up the heat with extra cayenne or hot sauce, or keep it mild and smoky for more sensitive palates. Swap in shrimp or tofu if you’re looking for a different protein—it all works! And because it’s gluten-free and dairy-free, it’s a great option for anyone with dietary restrictions or just looking to keep things light and clean.

Roots for this Dish

Cajun cuisine has roots in the French-speaking Acadians who settled in Louisiana, blending French techniques with bold local ingredients. This dish is a modern twist—keeping the signature smokiness and spice, but dialing back the heaviness. It’s comfort food with a kick, perfect for busy nights when you want something satisfying without the extra fuss.

Ingredients

  • 1 Lb Gluten free pasta
  • 1/2 Whole Smoked beef sausage sliced
  • !/2 Lb Chicken sliced
  • 1 – 2 Tbsp Zatarin's Creole Seasoning
  • 1/4 Whole Yellow onion sliced
  • 1/4 Whole Red bell pepper sliced
  • 1/4 Whole Green bell pepper sliced
  • 1/2 Cup Mozzarella cheese shredded
  • 1/4 Cup Parmesan cheese grated
  • 1 Tbsp Olive oil

Instructions

  1. Begin by cooking the pasta per box instructions. Make sure to keep it al dente.

At the same time, spice the chicken with half the Creole spice mix. In a skillet, with half the oil, add the chicken and brown for about 5 minutes. Remove from the pan and now add the sausage. Cook for 4 – 5 minutes and remove from the pan.

Add the remaining oil and add the onions. Cook for 2 minutes and then add the bell peppers cooking for 3 minutes. Add the chicken and sausage back to the pan followed by the pasta. Next, add both of the cheeses and some pasta water. Mix well and simmer for a couple of minutes.

    Serve and enjoy!
