A healthier version with my Light Gluten Free Cajun Pasta. The flavor is developed from the spice, Mozzarella and Parmesan cheeses with pasta water.
Begin by cooking the pasta per box instructions. Make sure to keep it al dente.
At the same time, spice the chicken with half the Creole spice mix. In a skillet, with half the oil, add the chicken and brown for about 5 minutes. Remove from the pan and now add the sausage. Cook for 4 - 5 minutes and remove from the pan.
Add the remaining oil and add the onions. Cook for 2 minutes and then add the bell peppers cooking for 3 minutes. Add the chicken and sausage back to the pan followed by the pasta. Next, add both of the cheeses and some pasta water. Mix well and simmer for a couple of minutes.
Serve and enjoy!
