Use what you have in the house – my own version of Chopped. Â I still had a few leftover breaded eggplant slices. Â My wife went to the store so the kids could have cheeseburgers and my daughter is lactose intolerant so it was time to try a more lactose tolerant cheese. Â Those were my ingredients to use.
Recipe
Lactose Free Cheeseburgers with fried eggplant:
- For the hamburgers, I combined 3 lbs of ground beef with 2 tbsp of Worcestershire sauce, 3 tbsp of Lawry’s seasoned salt, 2 tbsp garlic powder and 1/2 cup of Italian breadcrumbs – form patties
- Put the patties on your outdoor grill and cook 5 minutes per side on medium low heat
- While the patties are grilling, drop your already cooked and breaded eggplants into a deep fryer for no more than 2 minutes per side ( I also deep fried some raw onions)
- In the last 90 seconds of grilling the patties add the cheese (this cheese actually melted very well)
- Assemble with patty topped with the eggplant and then the onions – no need for any ketchup, mustard, etc.
