Honey Sesame Chicken

A dish that has texture and flavor – My Honey Sesame Chicken has sweetness and crunch.

As I have explored Chinese cooking, I have learned there are many common steps to follow in most recipes. It seems that many recipes begin with a marinade for the protein that includes corn starch. The corn starch helps tenderize the meat as well as helping the sauce ingredients adhere to the chicken. Then, the protein is battered using rice flour and club soda. After the chicken is fried, the sauce is added.

After the meat has been marinaded, tenderized, it is battered. The batter includes rice flour, baking powder and baking soda. The flour combination with the club soda creates a thicker batter than you would expect. It does however, create a combination that is light and very crispy. The chicken is fried in vegetable oil. I have gotten into the habit of double frying most things. The two step frying gets a super crisp exterior.

This recipe was so good my wife has already asked me to make it again. She saw me writing this post and looks at me and says “make that for me.” For you other food bloggers that read my blog, does this happen to you? How about all the time. I do take this as a big compliment. The challenge, though, as my fellow food bloggers know, is we like to create new recipes. I do have to say that I loved this recipe as well – WINNER WINNER CHICKEN DINNER.

Honey Sesame Chicken

Chinese dishes follow similar patterns of development – marinade, cook, add sauce. My Honey Sesame Chicken is fried sweet goodness.

Ingredients

Chicken & Marinade

  • 3 Whole Chicken breasts cut in pieces
  • 3 Tbsp Corn Starch
  • 3 Tbsp Shaoxing wine
  • 2 Tbsp Light soy sauce

Chicken Batter

  • 1 Cup Rice flour
  • 1 Tbsp Baking Powder
  • 2 Tbsp Corn starch
  • 2 Tsp Kosher salt
  • 1/4 Cup Club soda

Honey Sesame Sauce

  • 1/4 Cup Honey
  • 2 Tbsp Shaoxing wine
  • 2 Tbsp Light corn syrup
  • 1 Tbsp Light soy sauce

Instructions

Chicken & Marinade

  1. Combine all the marinade ingredients and massage into the chicken. Let marinate for an hour.

Chicken Batter

  1. Prep your wok with enough corn oil for deep frying. Get to 365 – 375 degrees.

    Now, combine all the batter ingredients in a bowl. Dip each chicken piece in the wok and cook for 2 – 3 minutes and pull out and drain over a pot. Continue this process until all the chicken has gotten its first fry. Then, fry again for the second time. Fry in batches for a 4 – 5 minutes until the chicken is fully cooked and the chicken is nice and crisp.

Honey Sesame Sauce

  1. Once the chicken is cooked, add to a bowl and cover with the sauce. Top with white sesame seeds and serve with rice noodles. Enjoy!
