I love my Kitchen Aid pasta machine attachment. I always wanted to make my own pasta. Now that I have this attachment, I have been making my own pasta frequently. I have my basic recipe down that includes flour, eggs, oil and water. With this recipe and this post, I have starting to challenge myself to make other types of pasta. This post shows how to make your own Homemade Spinach & Sweet Potato Fettuccine. These pastas went together really well in the dish I made. That recipe is for a later post.
The spinach fettuccine is a definite winner and a recipe I will make again, again and again. The sweet potato fettuccine was cool but, my wife helped me figure out it was too starchy. That makes total sense. So next time, I will use the sweet potato and flour to make gnocchi. It is not hard to make pasta and adding ingredients, flavors is just as easy. Practice will help one have the experience to know how an ingredient will affect the resulting pasta. As noted above, the sweet potato made the resulting pasta too starchy. The spinach adds a lot of liquid. So the water really needs to be squeezed out of the spinach. Also, as the wet spinach ingredients are added to the flour, be sure to add it a little at a time until the pasta has the right consistency.
- 6 ounces washed baby spinach leaves, stems removed
- 2 large eggs, at room temperature
- 10 to 12 ounces all-purpose flour
- 1 sweet potato
- 2 large eggs, at room temperature
- 12 ounces ) 3/4 pounds all-purpose flour
- Fill a small pot with about 1⁄2 cup cold water and bring to a boil.
- Add the spinach and cook until wilted.
- Drain and stop the cooking by running under cold water.
- Squeeze out as much of the water from the spinach as you can and form it into a compact ball. Chop the ball as thinly as possible.
- Place the spinach and eggs in the food processor and process until very fine.
- Add the wet ingredients to the flour in a bowl. Using a fork, combine fully.
- Take out of the bowl and start kneading the dough until the dough is formed and all the wet ingredients are fully absorbed.
- Knead the dough for 3 - 4 minutes and finish by forming into a ball. (If the dough is to dry, add water 1 teaspoon at a time until all the flour is absorbed.)
- Wrap in plastic wrap and place in the fridge for 30 minutes.
- Remove the pasta from the fridge and cut into 4 or 5 equal pieces.
- Using your Kitchen Aid pasta attachment, begin by stretching the pasta. (Video link in post)
- After stretching the dough, it is ready to be cut using the fettuccine attachment.
- The only difference from above is the wet ingredient is created by pureeing the sweet potatoes.
- Add to the flour and follow the same procedure as above.

I got so many other links before I found your blog, this is exactly what I was looking for, I wanted to make noodles using sweet potato, I don’t actually have a pasta maker, but I’m just going to cut with a knife, wanted to make some thing gluten-free and full of vitamins, Also wanted to use a flour that was More healthy than what sold in the United States. Appreciate the comment you said about sweet potato having a lot of starch, going to do a little research to see if there’s a way to compensate, or reduce the starch, or I will just check out your gnocchi recipe.
