I made a side of Quinoa to go with the blackened salmon sandwiches for our night at Ravinia. Â I had a number of vegetables already cut so this was kind of a catch all Quinoa. Â I grilled 2 ears of corn, halved a dozen medley tomatoes, and added red and green peppers, a bunch of chopped green onions and a few pieces of diced squash and zucchini.
Recipe
Grilled Corn & Tomato Quinoa:
- Boil 2 cups of water and add 1 cup of Quinoa and reduce to a simmer
- When the water has evaporated, add 2 tbsp of tomato paste, mix well
- Add in the Grilled corn, green onions, peppers, squash and zucchini and cook for 2 – 3 minutes
- Add in tomatoes and cook for 2 more minutes.
