There are some recipe ideas that are just fun. The GF Smoked Cheese Stuffed Sausages are creative and very tasty.
I think I saw this idea somewhere on a FACEBOOK video or a concept of cheese stuffed burgers, meatballs, etc. I decided it would be fun to make it into a hot dog or sausage. It was a great idea unless you are my wife. If I made this as a burger, she would have said this is awesome, such a good idea. But because it has the shape of a hot dog, she questioned it. That is so funny.
What I thought was super cool with this recipe was the cheese. Instead of using a mozzarella string cheese, I found a smoked mozzarella cheese string – YUM! Note to self – develop other recipes ideas for this smoked cheese. I love anything smoked and the smokiness added to these sausages was a winner. One of my favorite recipes of all time was my CHEESE STUFFED MEATLOAF – the more smoke the better. I must confess that I am such a huge fan of smoked foods in general. I cannot get enough food made on the smoker.

I have called these creations sausages. I am not sure that is really accurate. The shape is that of a sausage but I made the sausage as I would a burger. I spiced the turkey meat with adobo seasoning and lemon pepper. Those are far from traditional spices for sausages. To assemble, I simply rolled out the turkey meat in a sausage form and dropped the string cheese right down the middle. Then, I folded over the sausage to enclose the cheese. That is it. Just cook.

GF Smoked Cheese Stuffed Sausages
Ingredients
- 3 Lbs Ground Turkey
- 8 Ounces Smoked String Cheese
- 2 Tbsp Adobo Seasoning
- 2 Tbsp Lemon Pepper
Instructions

Begin by spicing the ground turkey. Mix well.
Roll out the ground turkey into a sausage form. Place the cheese right down the center of the ground turkey. Fold the ground turkey over the cheese and place on the baking tray.
Place in a 350 degree oven for approximately 15 minutes.
Serve with your favorite accouterments. Enjoy!
