The whole family is starting to eat more fish. Â Each of the kids, as they get older, is learning to balance their meat intake. Â I point this out because I think it is such a good change to develop early. Â There is so much more information on eating healthy and the visibility of better nutrition is everywhere. Â Now, we just need to get them to eat a greater variety in the fish they will eat. Â This night we used salmon for our tacos because that is the only fish my daughter likes.

Ingredients:
- 2 salmon fillets
- 2 Mangoes, diced
- 1 jalapeno, diced
- 1 avocado, diced
- 1 tbsp oregano
- 1 tbsp lime juice
- 1/4 red onion, diced
- 1 slice each of red and Napa cabbage
- 2 tbsp Adobo season salt
- 1 tbsp chili powder
- 6 – 8 Tortillas
Directions:
Rub the spices on the non-skin side of the salmon. Â Turn your grill on medium heat. Â Cook the salmon for 3 minutes on the spiced side and then turn over and cook for another 6 – 8 minutes. Â Meanwhile, in a bowl, mix together all of the salsa ingredients.
Finish by adding the lime juice.
For serving, take a tortilla, as much fish as you like and top with the salsa and cabbage. Â Enjoy!
