I got home and my daughter had a friend in town visiting from college and suggested we have finger foods and watch the Olympics. What parent wouldn’t jump at the chance.  So and you have heard this theme before – use what you have in the fridge.  I had a little bit of leftover feta cheese and some grilled chicken.  I saw that I had egg roll casings.  An idea was hatched.
Recipe
Feta Egg Rolls:
- I took 1/2 of a bar of fresh feta and crumbled it; Â add 1/4 mozzarella and 3 tbsp olive oil and mix together
- Take 1/4 each of a red and green pepper and slice lengthwise
- Final ingredient is to slice lengthwise, the grilled chicken
- To assemble, lay the egg roll wrapper flat (on a 45 degree angle as you stand) and place the cheese in the middle and place 1 slice of the red and green pepper above the cheese and the chicken piece, underneath the cheese
- Moisten each corner of the wrapper with water, and pull the far end over first, fold the sides and finish by rolling towards you
- Cook for 3 minutes in a deep fryer on 350 degree heatÂ
