Egg Souffle – I guess

This offering was actually a recipe that my wife found.  We have come a long way when my wife is not looking for recipes and plating ideas.  I welcome the help, eye and new perspective she offers to me.  I re- named this dish an egg souffle.  The recipe called for the eggs to be rolled when complete.  The thickness of the eggs make this, in my mind, not look to good.  In a more positive approach, I thought the eggs looked great offered in more of a souffle presentation.

The eggs were cooked in a glass baking dish.  I added pablanos in my rendition.  You can add so many flavors that you enjoy.  This is an omelet in a baking dish.  The recipe uses flour which I thought was odd but it really worked.  You don’t taste the flour but the eggs are light and airy.

Recipe
Egg Souffle:
Ingredients:

  • 7 Eggs
  • 1 cup skim milk
  • 1/2 cup of all-purpose flour
  • 3/4 of a pablano, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup each shredded cheddar and colby jack cheese
  • 1 tsp agave nectar
Directions:
In a blender, combine the eggs, milk, flour, salt and pepper.  Pour into a baking dish.  Add the pablanos and cheese evenly throughout the dish.  Bake in a 350 degree oven for 20 minutes.  Enjoy!

    It is delicious, adding all purpose flour to eggs may gives enough body to them.
