Crusted Tilapia

This is a post about a dish that worked out but not exactly as I planned it.  I bought some tilapia and thought I would bread it and pan fry it.  I looked on line for a couple of different ways to prepare it and locked in on one that used only lemon juice to moisten the fish and then breading it.  Not a good choice.  Using just lemon and no flour really did not provide for a texture of the fish to hold the breading.

Lemon goes well on fish so with the spices and the lemon the tilapia had good flavor.  I just did not get the presentation I hoped for.

Crusted tilapia 500 rot

Ingredients:

  1. 2 large pieces of tilapia fillets
  2. 1/2 cup lemon juice
  3. 2 tbsp Old Bay seasoning
  4. salt and pepper to taste
  5. 1/2 cup each bread crumbs and panko bread crumbs
  6. 1/4 cup of Parmesan
  7. 2 tbsp canola oil

Directions:

Pour the lemon juice in one bowl and combine the bread crumbs and Parmesan in another bowl.  Season the tilpia with the Old Bay and salt and pepper.  Dip the fillets into the lemon juice and then into the bread crumbs.  In a saute pan on medium heat, add the oil.  When good and hot, drop in the fillets.  Cook 3 minutes or so on each side.  Remove from pan and let set for a minute before serving.  Enjoy!
