In this Cream Cheese Pepper Roll, the recipe has sweetness from the cream cheese, sharpness from the peppers and the freshness the parsley. The result is also so colorful and pleasing to the eye.

I have already been suggesting how easy this recipe is. The hardest thing to do is to remember to take the cream cheese and goat cheese out of the fridge enabling it to soften. The rest is simply chopping – cutting the peppers into a small dice and putting a good chop on the parsley and cilantro.

Cream Cheese Pepper Roll
Some recipes are so easy to make but that does not mean they aren't good. This Cream Cheese Pepper Roll is colorful and tasty!
Ingredients
- 8 Ounces Cream cheese softened
- 4 Ounces Goat cheese softened
- 8 Whole Sweet peppers
- 1 Bunch Parsley
- 1/4 Bunch Cilantro
Instructions

Make sure the cream cheese and goat cheese are soft.
Dice the peppers into a small dice.
Add the herbs and one of the peppers to a food processor. Pulse until fully mixed. In a large bowl, add the cream cheese, goat cheese and the blended herbs. Mix until combined. Roll into a log and wrap in plastic wrap in put in the fridge for 20 – 30 minutes.
Remove the log from the fridge and unwrap the plastic leaving the log on the end of the wrap. Place the diced sweet peppers on the rest of the wrap. Slowly roll the log over the peppers. Once completely covered, press the peppers into the log.
Serve with crackers. Enjoy!
