Chorizo Chili Enchiladas

How to be creative when you make a lot of your main course and you want to eat it again before it goes bad.  Put a different spin on it.  The inspiration, as usual, comes why I was working out.  Now, as a total aside, I used to think that I was working out so I could keep eating.  It has finally dawned on me that I am working out to get in a place where I can watch cooking shows and let my mind go.

In this case, Giada was making some wrapped dish in which she mixed mascarpone into her main course, put it in a tortilla and served her meal.  I liked the idea and thought it was a great way to re-use my Chicken Chorizo Chili recipe from Butcher & the Burger and I knew it would be a favorite for my son.  When he saw the preparation, he got excited thinking I was making my enchiladas.  Not quite but close.  This is a concept that has a lot of fusion possibilities going forward.

Recipe
Chorizo Chili Enchiladas (I gave you the link up top for the chili):
Ingredients:

  • 1 small container mascarpone 
  • 8 oz spinach, wilted
  • 6 wheat tortillas
  • Handful of shredded cheddar cheese
Directions:
Wilt the spinach in a saute pan and set aside.  Reheat the chili and spoon in the mascarpone and mix until fully incorporated.  Next, add in the wilted spinach.  In the saute pan, place enough olive oil to fry each tortilla, maybe 1 – 1.5 minutes per side.  Next, take each tortilla shell and put 2 heaping tablespoons full of the chili and roll, place seam side down in a baking dish.  Finish with the rest of the tortillas rolling the chili.  Save a little bit of the chili to top with the cheddar cheese.  Broil on high for just 2 minutes and you are ready to eat.  Enjoy!
