Chocolate Tower Cake

Some ideas just turn out awesome.  This tower is definitely for the man of the house, or maybe, more appropriately, for the teenage boys in the house.  If you told someone you were going to bake chocolate chip cookie bars.  They would ask when they can come over to try them?  If you then said, I am going to top my chocolate chip cookie bars with melted caramel.  They would say I am dring over right now. 
 
When you then said, I am not done.  They would probably say you have got to be kidding me?  No I am not.  How about topping the chocolate chip cookie bar, with the chocolate caramel, with a chocolate chip cake.  And now you have, the Chocolate Tower Cake.
 
 
Recipe
Chocolate Tower Cake:
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt 
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 (12 ounce) package semi-sweet chocolate chips
Directions:
Preheat oven to 375 degrees.  Line a 13″ x 9″ glass pan with parchment paper.  Combine flour, baking soda and salt in a mixing bowl.  Beat the butter, sugars and vanilla in your mixer.  Add the eggs one at a time being sure to mix them in fully.  Gradually add in the flour and beat until fully incorporated.  Stir in the chocolate chips.  Pour into your baking dish and bake for 20 – 25 minutes.  You are looking for a golden brown top.  Let cool.
 
Next, simply melt the caramel and pour on top of the chocolate chip cookie bar and let set in the fridge overnight.  I used a little heavy cream to soften the caramels as they melted in the sauce pan.
 
Finish by using a devil’s food cake box cake.  You could certainly start from scratch.  I line a baking tray with parchment paper to make lifting the cake up simple.  Let the cake cool and put on top of the cookie bar and return to the freezer to set.  When you are ready to serve, take out of the fridge 10 minutes ahead of time.  Cut away and enjoy!
