Chocolate Jelly Filled Wafer Bars

You ever have one of those days where you just wake up with an idea of something you want to make.  These chocolate jelly filled wafer bars are just one of those ideas.  Not exactly sure why this idea popped in my head but these are simple and quite tasty.  The one lesson, I learned though, was buy decent wafers.  The ones I used were not so good.  But it looks pretty good – doesn’t it?

Ingredients:

  • 1 sheet of wafers
  • 1 jar – 6 oz  (I think) of raspberry jelly
  • 1 bag of semi-sweet chocolate chips
  • 1 cup of skim milk

 

Directions:

Put water in a pot and turn on to a strong simmer.  Place a mixing bowl on top of the warm water and add the chips and the milk.  Stir until completely melted.  The mixture should be smooth.  Remove from the heat.  Take your wafer sheet and cut into even strips.  I made mine about the size of a candy bar.  I just guesstimated.  Then, begin the assembly.  Place the one wafer on a rack and top liberally with the jelly.

Put some parchment paper below the rack (you will understand why in a second)Top this jelly and wafer with another wafer.  Next, pour the melted chocolate over the wafer sandwich.  Repeat this step for as many wafers as you wish to make.  I made about a dozen.  Move the rack to the fridge.  After a couple of hours, remove the rack and flip the bars.  Now, repeat the chocolate process on the bottom side.  If the chocolate has hardened, just put in the microwave briefly to soften.  Put the bars back in the fridge when all the undersides have been coated.  Low angle length 500

After 2 more hours, remove and enjoy!

    I totally have days like that. Except usually, I fall asleep the night before dreaming about what I want to make the following day 🙂 I can’t believe these are only four ingredients. What a fun recipe!
