Are you looking for more ways to use your Spiralizer? I am and I have found that it works great with carrots. I have added carrots to other Spiralized dishes like my Chicken Burger Bahn Mi Sandwich but never made the carrot the star of the show. In the other dishes, the carrot was a supporting character that I added mostly for color. If you want to see how the Spiralizer works here is a link that leads to a post about the tool.
I saw this recipe, or rather this image on Foodgawker, and thought what a great idea for a salad. The carrots have such a vibrant color and there sturdiness will hold up really well to the dressing. I changed up two things from the original recipe. First, the original recipe called for a quick steaming of the carrots after they were spiralized. I actually missed this direction in the recipe. I have made this recipe again, and purposely, skipped this step. I love the crunch of the carrots and letting the dressing sit on them will soften them up just perfectly.
The second change was all about the spice meter. The original recipe called for four tablespoons of red pepper flakes. I knew that was going to be a lot. So when I made my Carrot Salad, I only used three tablespoons. This was too much too. I remember sitting at the table and my wife laughing watching me cough because the dish was so spicy. I loved it though. I kept going and eventually got used to the spice level and stopped coughing. You ever eat something spicy and it is too hot but it is so good you just keep digging in?
- 10 medium-sized carrots
- 6 radishes, cut in matchsticks
- 1 cup fresh parsley
- ½ cup fresh basil leaves
- 4 green onions
- 5 large garlic cloves, roughly chopped
- ¼ cup white vinegar
- 1 cup canola oil
- 3 tablespoons of crushed red chili pepper flakes
- Salt to taste
- Place the fresh parsley, basil, spring onions, garlic, vinegar, oil, and crushed red chili pepper flakes in the bowl of a food processor. Blend until a thick paste is formed.
- Add salt to taste.
- Peel carrots and spiralize carrots into noodles.
- Mix carrot noodles and radishes with the spicy chimichurri sauce.
- Serve and enjoy!

I love how simple this salad is with a couple of ingredients only…carrots and radishes…I always have green onions on hand so I don’t have to go buy them to try this salad….so refreshing…will be trying this very very soon.

You definitely need to back down on the red pepper flakes. I made it again this weekend and used 1 tablespoon. Still has a good kick.

OK a few things excite me about this. 1) yes i have had something too spicy but so delicious I couldn’t stop. 2) Love seeing carrots getting their moment of glory. 3) THATSAUCE! Only thing is…I need to get a spiralizer. I feel like I’ll eat more veggies if I get one.
