One of the tricks I have been learning when we have company over is to make dishes that can be compiled. Â That way people can add the different items they like. Â This night, my angle was chicken wings done in a healthy style. Â The result was grilled chicken breasts in a Buffalo sauce glaze accompanied by blue cheese dressing (made with Greek yogurt) – see this link for recipe.
Top with a fresh tomato and a piece of iceberg lettuce and you have a mouthful!
Recipe
Buffalo Chicken Sandwich
- Take 8 fresh chicken breasts and toss in a bowl with a little olive oil and salt and pepper (the olive oil is primarily to prevent sticking on the grill)
- Turn your outdoor grill to medium low and cook on each side for approximately 8 minutes
- Then baste with Buffalo sauce (I bought it from the store – I know, I didn’t make it – give me a pass this time) doing each side twice for about a minute per side – turn the heat higher so the chicken breast will char a little with the sauce
- Finish by assembling with a fresh bun, the blue cheese dressing (see link above), 1 piece of iceberg lettuce, the chicken breast, a ripe tomato slice and top with the bun; dig in.
