One of the tricks I have been learning when we have company over is to make dishes that can be compiled. That way people can add the different items they like. This night, my angle was chicken wings done in a healthy style. The result was grilled chicken breasts in a Buffalo sauce glaze accompanied by blue cheese dressing (made with Greek yogurt) – see this link for recipe.
Top with a fresh tomato and a piece of iceberg lettuce and you have a mouthful!
Recipe
Buffalo Chicken Sandwich
- Take 8 fresh chicken breasts and toss in a bowl with a little olive oil and salt and pepper (the olive oil is primarily to prevent sticking on the grill)
- Turn your outdoor grill to medium low and cook on each side for approximately 8 minutes
- Then baste with Buffalo sauce (I bought it from the store – I know, I didn’t make it – give me a pass this time) doing each side twice for about a minute per side – turn the heat higher so the chicken breast will char a little with the sauce
- Finish by assembling with a fresh bun, the blue cheese dressing (see link above), 1 piece of iceberg lettuce, the chicken breast, a ripe tomato slice and top with the bun; dig in.
