This post is showcasing Barber Chicken’s frozen chicken meals. It does so, however, through showing how to create side dishes that go with the Barber Chicken products. I chose the healthiest dish which is the boneless skinless chicken breast stuffed with broccoli and cheese. How do you pair an interesting side dish with a main course that has a lot going on with it. Good question.
My side dish picks up on the broccoli and adds color and complimentary flavors. My orzo included tomatoes, garlic, spinach and onions mixed in. I love orzo. I love its consistency. Orzo is typically described as a cross between pasta and rice. Not exactly. Orzo is a pasta that looks like a rice. I find that orzo ends up very creamy. The texture is reminiscent of risotto without the cooking time and the stock added. Orzo picks up the flavor of what is added quite well. This Broccoli Orzo with Barber Chicken is a quick and easy meal to prepare.
The Barber Chicken with Broccoli & Cheese is so easy to prepare. Simply place on a baking tray and cook. As an aside, it is always important to cook chicken all the way through, whether fresh or frozen. Chicken is finished cooking when it registers 165 degrees. It is hard to know when you have the right doneness of meat – whether you desire rare or well done. The best way to know if your meat is cooked to your satisfaction, is to use a meat thermometer to know the exact temperature. This whole meal was on the table in 30 minutes. So if you are busy, or it is during the work week, grab a package of Barber Foods Frozen Chicken dishes and pull together a very satisfying, quick meal.
- 12 ounces edamame, shelled
- 1 tablespoon canola oil
- 1/4 cup frozen corn
- 1/2 red pepper, large dice
- 1/2 cup frozen peas
- 3 cloves garlic, minced
- 2 teaspoon salt
- 1 1/2 tablespoon Creole seasoning
- In a pot with 1/2 cup of boiling water add the edamame, peas and corn.
- Cook for 3 minutes. Drain and set aside.
- Heat a skillet on medium heat. Add the oil and cook until warm.
- Begin by adding the red peppers and soften for 2 minutes.
- Add 1 tablespoon of the Creole seasoning and 1 teaspoon of salt.
- Add the garlic and cook for 1 minute.
- Add the drained vegetables and the rest of the Creole seasoning and salt.
- Cook for 1 minute.
- Serve and enjoy!
