Is there anything more comforting than a grilled cheese sandwich? Cheese makes everything better.
Jump to RecipeThe beauty of grilled cheese is it seems so simple but it can be so complex. The basic grilled cheese is made so good by using good quality cheese and good quality bread. The traditional sandwich uses butter as its fat to get a good crust on the bread. Did I say that my sandwich used homemade gluten free bread? YUP!
There are so many ways to dress up a grilled cheese. You can add proteins as I have done with this sandwich. You can use more than one cheese as I have done with this sandwich. And you can toast both sides of the bread as I have done with this sandwich. Toasting both sides of the bread is one of my big tips. We love the crunch we get on our bread when you have the perfect grilled cheese. This toasting adds the needed texture.

Brisket Grilled Cheese
The grilled cheese sandwich can be more. Dress up the traditional sandwich with multiple cheeses and adding a protein as with this Brisket Grilled Cheese.
Ingredients
- 2 Pieces Leftover Brisket
- 2 Pieces Gluten free bread
- 2 Slices Meunster Cheese
- 4 Slices Smoked gouda
- 2 Tsp Olive oil
- 1 Tbsp Butter
Instructions

Begin by re-heating the brisket in a non-stick pan on medium low heat. Cook 1 minute per side. Remove from pan and set aside.
Next, add the olive oil to the pan and turn up to medium high. Once hot, add in the the gluten free bread and cook one side of each piece until toasty. Remove from pan.
Now, assemble the sandwich beginning by buttering the un-toasted side of the bread. Put down the meunster cheese first. Next, top with the warmed brisket. Finish by topping with the smoked gouda cheese. Place back in the skillet and cook 2 – 3 minutes per side.
Serve and enjoy!
