Blackened Salmon

Blackening salmon is really quite easy.  You simply need a good pan/skillet and some red spice.  I love my iron skillet and I used both cayenne and smoked paprika to get the nice color on the outside.  As a side note, I recently learned, and I am trying to remember exactly where I saw this, but leaving on the skin while cooking keeps in more of the moisture.  So I have learned to blacken one side of the fish, then flip skin side down and finish in the oven.

Recipe
Blackened Salmon:
Ingredients:

  • 3 salmon fillets
  • 2 tbsp each cayenne, smoked paprika and Old Bay Seasoning
  • 2 tbsp olive oil
Directions:
Generously apply the spice rub on the flesh side of the skin.  Heat your skillet on medium high.  Add the olive oil but let it get hot for 1 – 2 minutes.  Place the salmon in the skillet flesh side down.  Cook 3 – 4 minutes getting a good dark color.  Flip the fish and place in a 375 degree oven.  Cook for 10 minutes.  Remove from oven, let sit for 2 minutes.  Enjoy!

    I love salmon, it’s definitely one of my favorite! I will have to try this recipe…when my fiance isn’t around of course (she doesn’t like fish). Thanks for sharing, looks great!
