Blackening salmon is really quite easy. Â You simply need a good pan/skillet and some red spice. Â I love my iron skillet and I used both cayenne and smoked paprika to get the nice color on the outside. Â As a side note, I recently learned, and I am trying to remember exactly where I saw this, but leaving on the skin while cooking keeps in more of the moisture. Â So I have learned to blacken one side of the fish, then flip skin side down and finish in the oven.

Ingredients:
- 3 salmon fillets
- 2 tbsp each cayenne, smoked paprika and Old Bay Seasoning
- 2 tbsp olive oil
