Baked Tilapia in a Cream Sauce

I saw this recipe from LeasCooking and had to try it.  What makes this blogging world so cool is that our connections are so wide.  Lea is from Russia.

 
It is really quite simple to make but oh so good.  Simply saute carrots and then top the fish with a cream mixture and bake for 50 minutes and voila.
Recipe
Baked Tilapia in a Cream Sauce:
  1. !st step is to shred 4 carrots and saute in 1 tbsp of olive oil until they brown a little
  2. Next, prepare the sauce by combining 1 pint of buttermilk (original recipe calls for whipping cream), 3 tbsp of mayonnaise, 1 tsp each salt, pepper, ground coriander and ancho chili powder (this was an addition) and top with a good handful of parsley
  3. Dredge the fish in the cream sauce and layer them in a clay pot; then top with the rest of the sauce, spread the carrots over the top and top with the parsley
  4. Bake for 50 minutes uncovered at 350 degrees and you are done.
