Baked Fudge

My daughter and I were watching the Food Channel and an episode of the Pioneer Woman.  She made something she called backed fudge.  It is a cross between fudge and a cake.  It is really good or should I say, it was really good.  It did not last 24 hours in the house and we doubled the recipe.  What is it about chocolate?  There is no question that chocolate desserts go the fastest in our house.  I remember as a kid being able to eat chocolate for breakfast.  The biggest treat I remember is my mom making chocolate mousse for us.  She would always make a couple of extra and my twin and I would eat them for breakfast.

My son does the same thing.  Whenever I see him grabbing some dessert for breakfast, I always say the Breakfast of Champions.

Ingredients

  • 4 whole Eggs
  • 2 cup Sugar
  • 4 Tablespoons (heaping) Cocoa
  • 4 Tablespoons Flour
  • 1 cup Butter, Melted
  • 2 teaspoon Vanilla Extract

Preparation Instructions

Preheat oven to 325 degrees.

Beat eggs until fully mixed. Then, add in sugar and mix until just combined.

Now, you add in the rest of the ingredients including the cocoa, flour, melted butter, and vanilla extract.  Mix well but do not overdo it.

Pour batter into ramekins – we used a variety of ramekins with different shapes and colors. Set ramekins into a larger pan halfway full of water.

Bake 40 to 50 minutes.  You want the upper crust to be a little crispy and the rest of the batter to be firm. Use a toothpick and it should come out mostly clean but not dry.  The mixture should not be runny.

Serve with whipped cream or vanilla ice cream – we used vanilla ice cream.
