Today was my youngest son’s 17th birthday. You know what that means – an extra special creation for him. So not only did I create something new, I created the Nate Willie. You ask, “what is a Nate Willie?” Let me show you and explain. Start with homemade rustic bread, and spicy chipotle mayo (got to have spice for my son), combine roast beef, provolone cheese and cola caramelized onions and grill. Voila!
- Caramelize onions with 2 tbsp olive oil and one tbsp butter; once onions begin to soften and char on the edges add 1 tbsp white vinegar, 1 tbsp worstershire and 2 tbsp brown sugar and cook until liquid evaporates; then add 1/3 of a can of cola and cook until cola evaporates; then add 1 cup water and cook until the liquid evaporates; and then finish one last time with 1/3 of a can of cola and cook until all the liquid evaporates. Let cool.
- Add tbsp olive oil to a skillet and warm over medium high heat; while warming the oil, begin putting the sandwich together
- Begin assembling sandwich by buttering 2 sides of the bread; and a generous amount of the chipotle mayo, roast beef, caramelized onions and provolone cheese
- Grill 2 – 3 minutes per side to obtain good browning and a good melting of the cheese and serve



Add a bit of brown gravy and I do believe we have the makin’s of an almost Manhattan!
