WASTE NOT, WANT NOT! Creativity begins with a big jar of mangoes.
I really do not like to waste food. Just ask my wife. She calls me the king of leftovers. I would argue that this impulse comes from a desire to not want to waste food, and more aptly, a fun challenge for recipe creativity. The challenge this time? A big jar of mangoes I bought at COSTCO – 5 LBS worth. I thought I could eat them after dinner for a change of fruit. I think I underestimated how many mangoes there really were.

I knew mangoes would go really well with chicken but I wanted to create more of a chutney. Like most bloggers that have been cooking for some time, we have a pretty good idea how to make a lot of different foods, but we will google our blogger friends for a reference point. My chutney is adapted from CHILI PEPPER MADNESSS. The reference point I was looking for was hot to get the right consistency. Chutneys have a viscosity to them. I see chutneys mostly in Indian cooking. They are a spicy condiment made with a mixture of vegetables and/or fruits, often mixed with vinegar, spices, and something sweet.
I am sorry but I did not capture the pictures of my chutney making. But the thickness comes from cooking down the mangoes with a little juice added in. I also like to carry through my ingredients in my recipes, so I added some of the chutney to the pepper and onion mixture I made as well.

The chicken spiced up and ready for the smoker.

- 3 Tbsp Adobo Seasoning

- 2 Tbsp Spanish Paprika
- 12 Whole King's Hawaiian Roles
Mango Chutney
- 12 Slices Mango, rough chop
- 1 Whole Red Pepper, small dice
- 1/4 Cup Orange Juice
- 1 Medium Onion
- 1 Cup Sugar

- 1 Clove Garlic, minced
- 1 Whole Red pepper, sliced
- 1/2 Whole Green pepper, sliced
- 1/2 Whole Orange pepper, sliced

Smoked Chicken
- Spice the chicken liberally on each side. Move to smoker and cook on low heat for 60 – 90 minutes. Remove from smoker, let rest. After resting, cut in thirds horizontally for serving.
Mango Chutney and Peppers
- Add all ingredients to a sauce pot. Cook on medium heat for 30 – 40 minutes until the ingredients cook down. Let cool. Add the peppers to the pan and cook down until softened – about 5 minutes.
Final Assemblage
- Feel free to throw the roles, sliced in half, in a 325 degree oven for 3 – 4 minutes to crisp up. Make the sliders by placing the peppers on the bottom role. Next add the chicken and finish with a healthy helping of the mango chutney. Top with the remaining role.Serve and enjoy!
