Smoked Chicken Avocado Enchiladas

My family loves enchiladas.  And we love smoking food.  Not done yet.  Added an avocado sauce to the chicken and then topped with avocado cream sauce.  Now that’s an enchilada.

Recipe
Smoked Chicken Avocado Enchilada:

  1. Smoked 2 full chickens, spiced liberally with poultry seasoning and smoked paprika and smoked for about 1 1/2 hours; let cool then pull the meat from 1 1/2 of the chickens to use for the enchiladas
  2. For the avocado sauce, I used the flesh of 1 1/2 ripe avocados, 1 cup of buttermilk, 1/2 cup each of lite sour cream and mayonnaise, 1 package of ranch mix dressing (2 oz), 2 tbsp lime juice, 1 tsp cumin, 6 plus drops of hot sauce and a pinch of salt – blend in Cuisinart until the avocado is combined 
  3. Take the pulled chicken and combine with about 1/2 of the avocado mixture
  4. Now to assemble, take one 12″ wheat tortilla and place the chicken mixture in the middle and top with        shredded cheddar and monterey jack; roll up and place in a greased pan and cook for 5 minutes in a 350 degree oven
  5. Take out, and pour 12 oz or so of enchilada sauce over the rolled tortillas and bake for another 25 minutes
  6. Take out one more time and cover with more of the shredded cheese and bake for 5 more minutes
  7. Finish by topping with some more avocado cream sauce and enjoy!

    Hi, you will have seen that the new Food on Friday ingredient is chicken. I noticed that you did this post on chicken which I think would be great linked in. We already have a collection of over 40 recipes which is wonderful. At the moment the Food on Friday edition with the most links is Beef with 73 – I get the feeling though that Chicken could become the new record holder!
