Brisket Brie and Caramelized Onion Sandwich

I had leftover smoked brisket and wanted to do something creative in a sandwich.  I tried combining it with melted brie cheese and caramelized onion.  Turned out to be a great choice.  The flavors went together so well.  You really need to try this one!

Recipe
Smoked Brisket Brie and Caramelized Onion Sandwich:

  1. Reconstitute the brisket so it goes on the roll warm as well as creating some gravy to pour on the bread
  2. Meanwhile caramelize 1/2 a sweet onion in 3 tbsp each olive oil and butter;  this step will take a good 30 minutes – I added a 1/2 cup of water twice in the process
  3. Combine the sandwich by piling on the brisket, adding 2 long pieces of brie and putting in a 325 degree oven for about 4 minutes – I like the brie to be running a little
  4. Finish by topping off with the caramelized onions (Now see if you can get your mouth around the whole thing).
