The inspiration for this Zucchini Zoodles Homemade Marinara is my totally awesome leftover marinara sauce.  I made a big batch of marinara sauce for the GLUTEN FREE GNOCCHI I made and posted earlier this week.  The sauce was so good but I guess I have already said that point.  If you like garlic, then you need to try this sauce.

Zucchini Zoodles Homemade Marinara

This is such an easy dish to put together.  The sauce takes close to two hours but that is counting the roasting of the garlic in the oven.  The real cooking time is 30 – 45 minutes and everything is assembled 5 – 10 minutes.  So once you have everything in your pan, you can get back to your Facebook or your TV.  I would say that the difficulty level of this sauce is pretty darn easy.  So a cook with a little experience should be very comfortable putting this recipe together.

The key to keeping this recipe simple is the use of zucchini noodles as pasta substitutes.  I have a Spiralizer and it creates the noodles in seconds.  It is so fast and easy and cleans just as quickly.  I found this site SWEET HOME by Michael Sullivan that did a pretty thorough review of Spiralizers that I thought would be a good resource for you if you do not have a Spiralizer yet.  A lot of people who use the Spiralizer are vegetarians.  Now, I believe a lot of people who avoid gluten use a Spiralizer too.  The noodles are dropped in whatever sauce you are using and they are ready in no more than 2 minutes.

Ingredients

  • 1 Whole Zucchini spiralized

Instructions

  1. Spiralize the zucchini noodles to make spaghetti like noodles.

    Warm the leftover marinara sauce (recipe in notes section) in a sauce pan for 3 minutes.  Add in the zoodles and cook for 2 minutes.

    Serve and enjoy!
